We sell our whole and half steers by hanging weight. What does this mean? Hanging weight is the total weight of the carcass without the head, hooves, hide, and innards. Live weight is the total weight of the animal prior to being processed. Live weights and hanging weights will vary. Your beef will be dry aged on average 21+ days, unless requested longer (which is an additional cost). The beef will be butchered and packaged to your specifications. On average, you will receive 65% of hanging weight in packaged cuts. 

*Processing fees not included and average $.90 per lb. Must be paid directly to the processor at the time of pick up.
